Pecan Pie
Mini-Muffins - Debbie Williams
1 cup packed brown sugar
1/2 cup plain flour
1 cup chopped pecans
2/3 cup margarine or
butter - melted
2 eggs beaten
Combine brown sugar,
flour, and pecans; set aside. Combine melted butter or margarine and eggs.
Mix well.
Stir into flour
mixture. Fill greased and floured* miniature muffin tins about 1/2 full.
Bake at 350 for 15 - 20
minutes. Remove from tins immediately and cool on wire racks.
Makes 4 dozen.
* I use Baker's Joy to
spray muffin tins.
