Pecan Pie Mini-Muffins - Debbie Williams
 
1 cup packed brown sugar
1/2 cup plain flour
1 cup chopped pecans
2/3 cup margarine or butter - melted
2 eggs beaten
 
Combine brown sugar, flour, and pecans; set aside.  Combine melted butter or margarine and eggs.  Mix well. 
Stir into flour mixture.  Fill greased and floured* miniature muffin tins about 1/2 full.
Bake at 350 for 15 - 20 minutes.  Remove from tins immediately and cool on wire racks.
Makes 4 dozen.
 
* I use Baker's Joy to spray muffin tins. 

Pumpkin Bread - Jerice Talley

1 cup shortening
3 eggs
1 #303 can pumpkin
2 1/2 cups sugar
3 1/2 cups all purpose flour
1/2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1 tsp. cloves
1/2 cup chopped nuts (optional)

Mix shortening, eggs and pumpkin. In separate bowl combine dry ingredients, add to pumpkin mixture and blend well. (I stir it myself without mixer) Add nuts and stir. Pour into two greased, floured loaf pans and bake at 325 degrees for one hour. Let cool before removing from pans.

This recipe came in the November 1976 telephone bill and is entitled "Leave room for the turkey". My whole family loves it and I have to make it several times during the holidays...Jerice
